  • 2 medium celery ribs, chopped
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 4 cups low sodium vegetable broth

  • 2 bay leaves
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • 12 teaspoon red pepper flakes, crushed

directions

  • Place all ingredients in a slow cooker. Cover and cook on HIGH for 5 hours. Remove bay leaves, stir and serve. Yields about 1 cup per serving.
  • **NOTE**.
  • I used whole baby carrots, and also included the top parts of the celery, I cheat with my garlic and buy it already minced from Costco and my family LOVES garlic so I am sure I added more than what it calls for, I also added more spice on everything, including the red peppers. But after doing all of that, I still came out with a 0 Point Soup that tastes so good! :).

  1. This was a very good soup for the low calories you get. Next time I will trade out for beef broth which should bring some salt into the mix. My family does not like the spice so that will change also. I think this is a good base for minestrone. I wouldn't mind more vegetables maybe potatoes, zucchini, eggplant, green beans, or corn. Thank you for posting it.

  2. I made this using beef broth and found it to be very satisfying. A great way to get some extra vegetables in your diet. Thanks for posting!

  3. Not a WW follower, just wanted a good vegetarian slow cooker soup. This definitely fits the bill! I omitted celery and bay leaves (personal pref) and added a tsp of Bayou Blast from Emeril - great soup for low cost and low calories. Thanks for sharing!

  4. I just started using my slow cooker and I am trying to follow weight watchers. This recipe was easy and delicious. I like my food spicy so it was just right for me but if you don't like spicy foods you may have to leave out a few ingredients. I love the fact that this is 0 points and I can enjoy a large bowl of it. I couldn't find pre-made vegetable broth so I used the dry mix with water and it came out great!

Tweaks

  1. Great taste in a 0-point soup! I used chicken broth instead of the vegetable broth and ommited the bay leaves & red pepper, and it was still very tasty.

Married almost 10 Years to the handsome man you see above.. We have 3 amazing, energetic, healthy, eating us out of house and home BOYS.. And I have discovered a LOVE for cooking.. Actually I think it's always been there.. I just have more of a demand/desire for it now.. Besides trying new recipes, my hobbies include having a personal relationship with Jesus Christ, keeping my boys entertained, gardening, SLEEPING, and homeschooling. One thing I am HORRIBLE about is writing things down when I am making something up.. I tend to just add a little of this, and sprinkle a little of that.. Sooo- in turn I most likely will never be able to make the same thing twice.. Dang It! Good thing there's zaar.. ;)Enough about me already, How are You?
