This Weight Watchers Chicken Taco Soup Recipe is one of those WW meals I can make that my whole family will devour. Plus, I can still enjoy Taco Tuesday as well without using up all of my Weight Watcher daily points as well!

Now with the new changes on WW with the My WW, the only plan this soup will have points on is green, the chicken will have smart points value to them. I love the freedom of these new plans and on blue and purple this Weight Watchers Chicken Taco Soup is zero points. This is a great lunch leftover if you know you have a heavy smart point dinner coming up!

WHAT IS Weight Watchers?

When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.

New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.

I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. No matter the WW plan, it works to help you learn healthy eating habits. I have hit my lifetime goal weight several times but stopped following the plan and tracking, so the weight does creep back on.

How To Make WW Chicken Taco Soup:

In a large stockpot, bring some water to a boil. You will want enough water to cover your chicken breasts. The water will be used as your broth for your soup.

When your water is at a boil add your seasonings, broth, and chicken breasts to the pot.

Allow the pot with the mixture to boil for about 45 minutes until the breasts are fully cooked.

Remove the chicken breasts from the pot and shredded them. You can do this with a kitchen aid mixer or this time I shredded mine using my bear claws.

Spray your crockpot with a nonstick spray and start to open up all your cans.

In a strainer strain your canned corn and your beans and then drop into the crockpot. You can also rinse them off as well.

Place your into the crockpot of your shredded chicken then add in your diced peppers, tomato sauce, and tomatoes.

Slowly add in the broth from your pot until your crockpot is full. You can add more water later if it seems to need more.

Give the soup a good stir in the crockpot and set it to low.

Cover the crockpot and allow your soup to cook on low for at least four hours!!

I love that since this is a low point or zero point, I can add cheese, sour cream, or chips to it as well!!

Zero-point dinners are not always the way to go, but finding balance some days is important. If the rest of your meals are high points, this is a great way to fuel your body. Not eating dinner because you used up all your daily or weekly points will not help you in the long run on your journey.
