This flavorful red pepper & lemon rice is a delicious side that that’s easily made in under 20 minutes!
This red pepper and lemon rice is packed with flavor and is perfect to serve on its own, with a salad or grilled chicken.
I love when a recipe allows me to add an ingredient that I alway shave on hand and that everyone loves. In this case, it’s milk! With six kids we go through a ton of milk and we only buy the best!
Growing up, rice was a go-to side dish! Now, as a mom, not much has changed!Most of the time we serve it just plain rice with beans and everyone loves it! Joseph asks for it every night for dinner, but recently my older boys are starting to ask for a little more food diversity. Last time we made shrimp fried rice and it was a hit!
This time I decided to make red pepper and lemon rice and I have a feeling it’s going to become a favorite at dinner time!
How To Make Lemon Rice
Ingredients:
Butter
Olive oil
Garlic
Red pepper (optional)
Lemon zest
Long grain rice
Turmeric powder
Salt and pepper
Vegetable broth
Milk
Lemon juice
Fresh dill
Instructions:
In a pan melt butter and olive oil.
Stir in zest, red pepper and garlic. Stir until soft.
Now add rice.
Season rice with numeric, salt and pepper.
Cook for 1-2 minutes.
Add broth, milk and lemon juice.
Bring rice to a boil.
Reduce heat to simmer and cover pan.
Simmer until liquid has evaporated (about 15-20 minutes)
Remove pan from heat.
Taste and adjust seasoning.
Garnish with dill.
Optional: Top with slices of lemon.

Yum! This looks and sounds so good. I love rice. I cook it every once in a while. If it were just me, I could eat rice everyday, and as my main course. In-fact I know I would, but my family would miss meat.

We get similar rice here in Dubai but instead of red chilli they have dried pomegranate. You should try that too. It tastes delicious and Im gonna try this for sure!
