This time of year, I can’t help but think of Irish food. And Irish colors and shamrocks. That is because I’m married to an Irishman, and I have Irish children. So, thus this fantasticIrish Flag Spinach Salad Recipe.

We’re also BIG salad lovers, so this Irish Flag Salad is big on our list of favorites. Plus, it’s a fun salad to serve company this time of year. [Think St. Patrick’s Day coming up in a few weeks!]

  • Spinach
  • Oranges
  • Pears
  • Feta cheese
  • Pistachio nuts
  • Fresh basil
  • Plus a fabulous dressing

Irish Spinach Salad Recipe

  1. In a small bowl, whisk together dressing ingredients!
  2. In a large salad bowl, layer spinach, pears and oranges, feta cheese, pistachio, basil, and dressing. Toss and serve cold!

That’s what I love about my Instagram stories … they are pretty true to what is happening that day. But this salad! It’s fresh and yummy and so colorful!

Anyway, this is us. I don’t know who took this pic of Paul and me in our #2 house. Man, did I love this kitchen. And I wonder what I had taped to my kitchen cabinet. HA. I really wish I could zoom in on that. Looks like a big salad in the white bowl, or maybe pasta since there’s a big pot on the stove.

This was around 1999, I’m thinking.Wow, 20 years ago!

Ingredients

Salad

  • 2 oranges, cut into slices or supremes
  • 1 pear, thinly sliced
  • 1/2 cup feta cheese
  • 1/4 cup roasted, chopped pistachios
  • 1/4 cup fresh, chopped basil
  • 4 heaping handfuls of spinach

Dressing

  • 3 Tbsp olive oil
  • 1 1/3 Tbsp orange juice
  • 1 tsp honey
  • 1 tsp apple cider vinegar
  • 1 Tbsp lime juice
  • Salt to taste

    I substituted an Asian Apple Pear for the pears as they are not in season now and it was delicious. Will definitley make this refreshing tasty salad again 😋

    It turned out perfect. I followed the recipe , including the dressing but doubled the whole thing for a crowd. I used crumbled goat cheese instead of feta, and added 2 granny Smith apples .
    It was a big hit. I was surprised how quick and easy it was. I used all fresh ingredients, as for the oranges, I used 5 cutie mandarins .
    Delicious!

    You inspire me to Enjoy having people over more and stress less about my home’s imperfections! It really is about loving people and feeding them – not just food- but acceptance and warmth and love.
    Is that wallpaper behind your stove and along wall under cabinets?!? It looks like the same wallpaper I loved so so much in our dining room 1998-2015, that my daughter insisted must come down during our 2015 remodel!

      It is … and I LOVED that wallpaper so much. It was a really popular print, and we eventually remodeled that kitchen and took it down in 2003! :)
